Whisky fans get ready for this premium pop-up dining event bringing the unique experience of one of the oldest distilleries in Scotland to Sydney, for a limited time only. Created by award-winning distiller, Highland Park, 'A Wild Harmony’ immersive whisky dining experience invites Sydneysiders in to a curated three course meal, showcasing Scotland's most complex and balanced whiskies through the Highland Park range. Guests will try Highland Park whiskies paired with each of the three courses. The pop-up is taking place at the iconic Palm House in Sydney’s Royal Botanic Gardens on the 3rd & 4th June 2022. The menu will consist of: ON ARRIVAL Highland Park whisky highball with lemon and soda ENTREE House poached king prawns with smoked fennel puree, sorrel and nasturtium leaf paired with 12 Year Old Highland Park whisky *Gluten free/vegan option available MAIN COURSE Red braised wagyu beef daube, porcini cream, onion petals, radish, linaria served with charcoal bread rolls and whipped chive butter paired with 15 Year Old Highland Park whisky *Gluten free/vegan option available DESSERT Honey poached pear, brown butter crumble and brown sugar ice cream parfait paired with 18 Year Old Highland Park whisky *Gluten free/vegan option available TO FINISH Highland Park whisky old fashioned ginger and vanilla or old fashioned salted honey Please note: Our menu contains allergens and are prepared in kitchens that handle nuts, shellfish, gluten and eggs.
