From Paris to Hanoi, Marseille to Vientiane and beyond, experience the impact five decades of French influence left on the cuisine of Indochina in an inspired 6-course degustation with matching French wines. Chef Tiw’s approach to cooking is to harness the flavours of his childhood homeland and to reinvent them with the influences of his culinary experiences travelling abroad. He marries the perfect balance of French and Southeast Asian ingredients and techniques to create a truly unique dining experience. Each course has been paired with a wine from France’s finest wine growing regions such as; Alsace, Burgundy and Chablis.
